Cajun-Spiced Tilapia with Quinoa & Sautéed Zucchini

(Serves 2)

Ingredients:

  • 2 tilapia fillets (6–8 oz each)
  • ¾ cup quinoa
  • 1½ cups water or broth
  • 1 small zucchini, sliced
  • 1 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tbsp butter
  • Salt & pepper to taste
  • Lemon wedges for garnish

 

Instructions:

1. Cook the Quinoa: Rinse quinoa. In a saucepan, combine quinoa and broth/water. Bring to boil, then cover and simmer for 15 minutes. Fluff with fork.

2. Sauté the Zucchini: Heat ½ tbsp olive oil in a pan. Add zucchini, season with salt and pepper. Cook for 5–7 minutes until golden and tender.

3. Cook the Tilapia: Pat dry and rub both sides with Cajun seasoning. Heat ½ tbsp oil and butter in a skillet. Cook fish 3–4 minutes per side, until flaky and opaque.

4. Serve: Plate quinoa, zucchini, and tilapia. Garnish with lemon wedges.
